Vegetable Patties

A great way to make the kids eat a wide variety of veggies, also this is a fun little snack or meal. The patties are very versatile and can be used in a many ways. Be sure to check the tips section to see its uses.

Kind of Food: Main Course or Side
How long: 20-25 min
Makes: 6 patties – 2 inch rounds
Pots & Pans: A deep pan for deep frying, small mixing bowl.


Oil to Deep fry
1/4 cup Broccoli Slaw or Cole slaw –  (or any finely shredded veggies)
1/2 cup Plain Potato Buds (The plain, unflavored and unsalted versions are the best)
1/4 cup Onion finely chopped
1/4 cup Green Peas (Use frozen peas – defrosted in a microwave – about 1 min)
1 Tbsp Cilantro finely Chopped
3 Tbsp Bread Crumbs (plain bread crumbs)
2 Tbsp Besan (Channa Dal Flour) (you also use corn flour or plain flour)
1 tsp Salt –  (or to taste)
1 pinch Baking Soda
1/2 tsp  Red chili powder or Paprika –  or to taste (optional) (or finely chopped green chilies)

How to make:
Pour oil in a deep pan (about 2 inches of oil) on medium-high heat. While the oil is warming up, start your preparation. In a Mixing bowl (you may use a stand mixer too) place the broccoli slaw and sprinkle salt. Let it stand for 5 minutes. To this add the rest of the ingredients and give it a good mix for 5 minutes by hand (or 3 minutes on medium speed in a stand mixer). Add enough warm water to make it into a soft dough. Divide the mixture into 2 inch balls, flatten them out and set aside. Check the heat of the oil (350F or stick the back of a wooden spoon and the bubbles should come out rapidly or put a small piece of the Pattie mix and see if it fries up quickly) and fry the patties till golden brown.

Tips, tricks & alternatives:
You can add more texture and nutrition by adding a few Cashew Nuts and/or raisins.
Make these ahead and freeze them or store them in a refrigerator for a few days.
You can make these in fun shapes too like hearts, triangles by using cookie cutters.

Serving Ideas:
Use as patties and make veggie burgers
Served plain or with sides like ketchup & Ranch.
