Creamy curried pumpkin soup

This version of pumpkin soups is comfort food.  It is tastes like a good curry, but eliminates the process of making the curry sauce.


Kind of Food: Main course / side dish
How long: 30-35 min
Makes: 2 Quart or 8 cups
Pots & Pans: Stockpot

3 cups of pumpkin puree (available in the canned foods section)
2 tsp olive oil
1 cup chopped onions
1 Tbsp chopped garlic
1 whole green chilly (slit in the center)
1 Tbsp of your favorite curry powder (substitute: garam masala)
1 tsp red chilly powder
1 tsp turmeric powder
2 tsp salt
6 cups of vegetable or chicken stock
1 cup coconut milk
3 Tbs of fresh finely chopped basil  and/or cilantro

How to make

In a stock pot saute the garlic,  onion and green chilly with olive oil.  Add salt to fasten the cooking process. Once the onions turn translucent (approximately 4-5) minutes add the pumpkin puree.  Add turmeric powder, chilly powder and curry powder and cook for 3 minutes stirring occasionally.  Now add the stock and make the mixture homogeneous by stirring.  Boil it on medium low heat for 10 – 15 minutes.  Add coconut milk.  Heat thoroughly mixing the soup for 2 -3 minutes without letting it boil vigorously.  Remove it from the heat and add cilantro and/or basil.

Add chopped fennel or celery or bell peppers or carrots to onion at the beginning of the recipe.

Tips, Tricks & Alternatives
Roasted purred carrots can also be used instead of canned pureed pumpkin.  Left over roasted carrots will work good too.
You could add rice noodles (‘cos they cook fast) after adding the coconut milk to convert this soup into a noodle soup.  If you choose to add noodles, then add 1 cup of water along with the coconut milk and let it cook on low heat for 4-5 minutes.
Left overs can be used as pasta sauce.  Toss it with cooked pasta and top it with grated parmesan.

Serving ideas
Can be served with fresh bread or pita or nan.

Can be served in coffee mugs in a party as an interesting hors d’oeruvres (appetizer)
