Date Chutney for chaat recipes

This sweet chutney with dates is an ideal candidate for chat recipes, to drizzle on top of fruits or as dipping sauce for the little ones.

2 cups of dates chopped in small pieces (remove seeds)
1.5 cup water
3 Tbsp tamarind concentrate (available in jar in Indian grocery stores)
2 tsp cumin seeds
1 Tbsp coriander powder
A pinch of salt

How to make
Boil the dates in 1/2 a cup of water until they turn tender (approximately 5 minutes) on medium heat.  Cool and grind the dates to a fine paste.  Roast the cumin seeds in a dry pan for 1 minute on medium heat until fragrant. Add the tamarind paste, 1 cup of water, coriander powder, chili powder and salt.  Boil on medium low heat for 7 minutes. Take this mixture off the heat and add the date paste. Dilute to desired consistency with warm water.

Alternate method
Make the date paste and freeze in cubes as follows.
Freeze the date mixture in ice cube trays covered with saran wrap for an hour.  Once it is frozen remove the date chutney cubes from the tray and place them in a ziploc bag.  Label the bag as ‘date chutney’ and the date, so you know  when you made it.  These frozen cubes are ideal to pick just the right portion you will need each time.
Each time you need date chutney pick as many frozen date cubes out of the freezer.  In a microwave safe bowl add the tamarind paste, 1 cup of water, coriander powder, chili powder and salt.  Microwave on high setting for 3 minutes.  Add the date cube and dilute to desired consistency with warm water.
