Sweet corn chicken soup with vegeterian option

This sweet corn chicken soup is a wholesome meal ideal for lunch or a light dinner (with bread) or as an accompaniment to a meal.  This recipe can be easily adapted to vegetarians, so read on and this recipe will open doors to substitutions for chicken beyond this recipe.   This recipe is also ideal  for toddlers.

Sweet corn soup

Kind of Food: Quick meal / side
How long: 20 min
Makes: 2 Quarts / 16 cups
Pots & Pans: Stockpot

Ingredients
2 lbs of chicken (bone in)
Substitute: Frozen soy protein granules or dry veggie protein granules
2 cans (8 oz) of cream style corn (available in the canned veggies section)
Substitute: plain corn + 2 Tbsp of butter + 1 cup of cream + 1 cup of water*
2 Tbsp of ginger and garlic paste
20 stems of cilantro with stems (fresh coriander)
2 green chillies slit
3 Tbsp of soy sauce
3 tsp pepper powder
1 cup of milk
1/2 cup fine cut scallions

How to make
Cook chicken (or the vegetarian substitute) with 1 Tbsp of ginger garlic paste and 1 tsp of pepper powder in a pressure cooker for 3 whistles. In the mean time, saute cream style corn with the rest of the ginger garlic paste, stems of the cilantro, pepper powder, soy sauce and 2 slit green chillies for 5- 7 minutes.  De bone and shred the cooked chicken to fine filaments. Cooked vegetarian protein substitute is fine as is.  Add the chicken (or the vegetarian substitute) to the corn mixture and cook for 3-4 minutes. Add milk and cook for 1 -2 minutes stirring occasionally without letting it boil.  Garnish with fine cut cilantro leaves and scallions.

Note: Soy sauce is salty so there is no requirement to add salt to this recipe.

This recipe works fine for adults as given.  It could be made spicier by adding more of ginger garlic paste and / or pepper.

Tips, Tricks and Alternatives
Left over cooked chicken (of any kind) works fine for this recipe when shredded using a blender.
Slit green chillies will provide for flavor without making the soup spicy.  Slit and DO NOT SPLIT the chilly.
*If using plain corn add butter while cooking corn and substitute 1cup of cream + 1 cup of water instead of milk towrds the end of the recipe.
This recipe could be done with just veggies using carrots and peas instead of the chicken or with mushroom for sweetcorn mushroom soup.
Addition of crushed crackers of their favorite kind will make it easy for toddlers to handle not just this soup but most.  The size of cream style corn and shredded chicken (or vegetarian protein) are the ideal size for the little ones to handle.
Cilantro stems have greater flavor than their leaves,  so adding them at the beginning of the cooking process will get them soft and provide a very nice aroma.

Quick mango salad

This quick mango salad is as much fun to make as it is to eat.  It can be easily tweaked to a Mexican salad or an Asian salad or an appetizer.

Kind of Food: Appetizer / side dish
How long: 10 min
Makes: 3 cups
Pots & Pans: Bowl

Ingredients
1 cup chopped mango
1/2 cup frozen corn -thawed
1/2 cup canned beans like black-eyed pea/pinto or kidney bean washed and drained
1/2 cup of chopped tomato
1/2 grated mozzarella or any cheese
1 Tbsp fine chopped cilantro
1 tsp pepper
a pinch of salt

For Mexican salad
2 Tbsp sour cream
1 cup of tortilla chips

For Asian salad
2 Tbsp fried chowmein (optional)
1 Tbsp honey roasted peanuts

For appetizer
30 pieces of tostido scoop chips or regular tortilla chip

For plated salad
2 cups of shredded lettuce
1 Tbsp of any vinaigrette

How to make
Mix all the ingredients mentioned for the salad.
For Mexican salad – top with sour cream and crushed tortilla chips.
For Asian salad – omit cheese in the salad recipe and garnish with chowmein and peanuts.
For appetizer – place 1 Tbsp of prepared salad on each of the tostido scoop chip.
For plated salad – toss the lettuce with the vinaigrette and place the prepared salad on top.

Add fresh chopped green chili, 1 tsp of cumin powder for added flavor.

Can substitute canned pineapple chunks for mangos after draining them thoroughly.
